Putting my idealism to the test

Gas is expensive... supply and demand and what not. Nasty little war corporations making profit decision rahter than common good. So my little earthy crunch hippy granola side is rearing it's head saying perhpas I should live what I believe. So I am off on a local veggies, local grain, canning/freezing mission. We have an extra freezer and a basement with lots and lots of shelves. I am afriad I might be a little late in the season for some harvests. I am off on a mission to find good canning and freezing recipes. Anyone local want to join me? This job is much easier with more people.

Let me know if you have any recipes of books to suggest.

While I don't have any recipes, I do know someone who does, and can get some recommendations from you.

What with gas prices and whatnot, we are going to see a significant rise in fuel prices.

Aah, high gas prices... Only one of the many reasons that we run 2 cars on Grease. ;-) It's recycled, and free! :-D

But I will tell you anyhow, that the grease tank is separate from the main tank, and you switch back and forth. The coolant line runs through the grease line, and heats it up before the car can be switched over to grease.

we are debating a hybrid for the next car... but if Bio diesel becomes more readily available. that may put a diesl on the possibility list as well.

That's also why Fred and I are volunteering with Co-op Power who is trying to get a controling share of Northeast Biodiesel in Greenfield. We're trying to get more pumps around, but have to get members first. Northeast Bio is going to be the first plant that uses waste oil. :-D As it is, we have to go to Brattleboro to get our Biodiesel. So it's lucky that on grease we only fill the cars once every 2-3 months. :-)

As someone else commented, Ball has good canning info. If you're going to get into canning anything other than tomatoes (which you can do in a simple water bath) you should invest in a pressure canner. It will allow you to process low acid veggies like corn or beans. My pressure canner came with a great instruction book that covers most things you'd want to can.

You should also look into buying a portion of an animal (pig, beef, etc.) having it cut into managable pieces and freezing it. For that you might want to invest in a food sealer (Fergus has one, he can tell you about it) to vacuum seal freezer packs.

One of my current favorite books is "Putting Food By." It's got a lot of up-to-date information and should be available.

You do know me and I agree that "Putting Food By" would be a good one. I think my mom has it. I'll see if she has any others to suggest. (Mom = organic gardener, get eggs (and milk at one time) from local farm, we even grew our own meat at one point. So I grew up with canning and all that. Hard to do in a condo, darn regulations banning fowl and livestock!)

Freezing is super easy for veggies. It's basically just blanche, drain, toss in a baggie then into the freezer. You can also blanche, drain, place on cookie sheet then place in freezer until frozen and transfer to baggie tossed back into the freezer if you want to get fancy. Easier to get just the amount that you want.

I mention canning and preserving meat to a co-worker right before Pennsic, and he pulled out "Putting Food By". Swore by it. I took it home and read through it. Very good and well written. Beyond that Ball is great.
